Canning – How to Can Your Own Strawberry and Blueberry Jam

During the summer months, I look forward to canning my own homemade strawberry and blueberry jams. People often tell me that they don’t get into canning because they think it’s too hard, however, one of the easiest things to can is homemade jam.

For the following recipes, you will need some jelly or half-pint sized canning jars, seals, rings, and a water bath canner. If you have a jar lifter, silicone spatula and a funnel, they would be useful too, but not necessary.

Easy Strawberry Jam Recipe

3 cups fresh strawberries, caps removed
3 cups granulated sugar
1 envelope of fruit pectin (Sure-Jell)

Fruit Preparation: Wash and remove the caps from your fresh strawberries, place them in a medium sized saucepan.

Stir in 1 cup of granulated sugar and bring the mixture to a rapid boil and boil for 4 minutes. Stir in the second cup of granulated sugar and bring it back to a boil and boil for an additional 3 minutes. Finally, stir in the remaining 1 cup of granulated sugar and contents of 1 envelope of fruit pectin, bring mixture back to a full boil and boil an additional 3 minutes, stirring constantly. Remove pan from the burner and let it cool down for 10 minutes, stirring mixture occasionally with a nonstick silicone spatula. Spoon mixture into hot clean jars and seal. Process the jars in your water bath canner for 10 minutes.

Easy Blueberry Jam Recipe

4 1/2 cup fresh blueberries, crushed
2 tablespoons lemon juice
7 cups granulated sugar
2 envelopes of fruit pectin (Sure-Jell)

Fruit Preparation: Wash and drain fresh blueberries in a colander and then measure out 6 cups and place them into a bowl. Using a potato masher, mash down the blueberries until you have 4 1/2 cups of crushed fruit.

Place fruit in a large stock pot. Stir in the lemon juice and then add in the granulated sugar, one cup at a time. Cook mixture over medium-high heat and bring it to a full rolling boil and boil hard for 2 minutes, stirring constantly with a nonstick silicone spatula or spoon. Turn off the heat and skim off any foam that has developed on the top. Stir in the liquid fruit pectin until mixture is combined.
Spoon mixture into hot clean jars and seal. Process the jars in your water bath canner for 10 minutes.

If you’re giving a jar of your best summer produce as a gift, you want a professional looking personalized label. These DIY custom label making instructions will show you how to make the perfect label for any occasion.

Here is the beauty of this custom label making process:

Multiple yet individual custom labels. For example you could setup your word processor to print 10 labels per page and print a unique jar number on each custom label (6 of 24). The base label material can be any color or texture you printer can handle. Cut your jar label to any shape or use specialty scissors for a decorative border. Use photos, artwork, birthday or greeting cards as custom labels. Hand or machine stitch cloth labels for special gift jars.

In my opinion, the perfect jar label(s) should relay two messages to the recipient.

The jar contents, maker, year, storage requirements, expiration dates, etc. That information found on that piece of masking tape on the jar and the info in your head.

Facts of interest concerning this unique jar, e.g., strawberries from your garden, peaches from Happy Trails Ranch or canned for the 2008 Lane County Fair.

I prefer the two label approach. The first label passes along all the necessary information allowing full artistic license for the second label.

For example, you could make the second label a birthday card. Using our carpet tape label making method, you could attach a purchased birthday card to your jar. Or better yet make a homemade birthday message. If you are the creative artistic type, make your own custom label. It doesn’t even have to be paper, e.g., needlepoint or embroider your message on the jar. Use your computer and an internet card generator to make a personalized message.

The birthday example is just one idea for the second label. There are countless reasons why you would give your home canned produce as a gift. The whole process of making a canning jar label is quite simple.

Start with a page of printed custom labels or craft project to be used as a label. Apply double sided tape to the back to make a homemade label. If desired apply a clear acrylic coat for longevity. Cut the label to the desired shape and size. Peel the backing off your new jar label and place it on your canning jar.

That’s it! You’re done!

Here is an example of a simple nice looking canning jar label for Mom’s peaches. We used clipart and standard fonts font on most word processors.

How simple and cheap can a personalize canning jar label be for your home canned produce? The most difficult part of this project is designing the custom label.

I have several tips to aid you in making a professional looking custom label. The most important tip is that when making a long label for a curved surface; use several pieces of tape parallel to the curve to avoid buckling. The process of canning is simple, but it does require a good base of knowledge before you can do it confidently. Generally, canning involves putting a prepared food into a sterilized jar. Having been raised in rural Alabama, I must confess, I’m a bit domesticated. Growing up on my Grandmother’s farm, I spent many a summer shelling peas and canning them in her kitchen. As I got older, we moved away from near my Grandmother, and my canning days were ended.

About 20 years ago, I got the wild idea to try home canning again, after finding a pressure canner in a catalog. I bought two and I have been canning ever since. Every year at Christmas my husband and I can about 75 quarts of pasta sauce and give them out as gifts. All of my friends and family look forward to it. I love to can and have been collecting canning recipes for years.

Canning jar candles are very easy to make, make great gifts, and are only limited by your imagination!

To start all you need are some narrow-mouth canning jars, wire ribbon, potpourri, candles, small glass votive candle holders, and craft glue or a hot glue gun.

If you don’t have any old canning jars, you can find some very inexpensively at thrift stores and yard sales. Wire ribbon can be a little expensive. Look for it at yard sales and at craft store clearance sales. The after-Christmas sales a great time to stock up. One roll of ribbon will make several canning jar candles. Potpourri you can make yourself or buy on sale. Votive candles are inexpensive at stores like Target or Walmart, and you can also find glass candle holders very inexpensively at Walmart. You want one that will set in the rim of the canning jar.
